I always manage to learn something new at CoffeeGeek.com, be it from the reviews/articles or from the forums. Today I learned that milk near the steam wand can scald even though the overall temp of the can of milk is not scalding temp. This is why we make the nifty whirlpool of milk when heating, to make sure that no milk sits near the wand and scalds. I always thought it was just a texture thing. Now I know.
And knowing is half the battle.
