I bought a new toy today:
It's a 9"x3" cake pan. Nothing too amazing, but it's not something I've seen in stores a lot (most places have 1.5" or so deep) and I have wanted it for making cheesecakes in. I have learned that cheesecakes work best when baked in a dish of water, like custard since that is essentially what they are, and a spring-form pan leaks when you do that, leaving you with a soggy mess.
So today I was going to stop by the restaurant supply store to get a new cake cover for the shop and while I was there I picked up my new toy. Lovely. :)
Now I need to bake a cheesecake. I think I'll try something other than the chocolate one I've made a couple of times now but not just a plain one... Something citrus maybe would be nice for spring.
